Miami, Florida. The city where you can find million dollar cars, gallon-sized mojitos, refined and renowned cuisine of all sorts; except a gourmet donut. That is, until The Salty Donut took the city into a whirlwind of small batch craft donuts, alcohol infused creations, and a truly unique rotating coffee program.
Co-owners Andy Rodriguez and Amanda Pizarro teamed up with Executive Pastry Chef Max Santiago to research donut shops around the country for two years before launching their concept in Miami, via popup trailer in December 2015. Now, every Friday-Sunday, you can find both owners slingin’ delectable classic favorites like “Traditional Glazed Buttermilk” to exotic concoctions like “Peach & Bourbon”.
“We really did our research and it was a combination of all the things that I think are important; a great concept, an amazing staff and an awesome product,” says Andy. While traveling and visiting donut shops nation wide, Andy and Amanda were let down by the quality of donuts found in local shops. “Many shops will take a donut and put crazy ingredients on them like goldfish or cereal. It’s not as developed as our creations. We try to make sure everything in our donuts are homemade.” says Amanda.
The other key component to The Salty Dog synergy is their rotating coffee bar. Andy explains, “I’m a huge coffee nerd and have always been obsessed. I found that great donut shops were lacking in their coffee. And what goes better with donuts than coffee?” The Salty Donut coffee program has a lineup of rotating coffees hand-picked by their team from their favorite coffee roaster, Intelligentsia Coffee from Chicago.
It took more than two years of research and a tremendous work ethic to bring Miami’s first artisanal donut shop to fruition. Andy says, “It’s everything that’s hard about a startup, and everything that’s hard about hospitality, mixed with all the variables in between.” Andy and Amanda were both born and raised in Miami (and now engaged) and build their business according to what they want to see as locals. “It took a lot of doing and acting on our gut instead of just talking about it,” says Andy. They are known for their continuous partnerships with other local establishments to bring in unique donut collaborations. Whether it’s local farms, breweries, or even smokehouses, Andy and Amanda stay close to their large fan base’s wants to deliver a tailored experience. “We pride ourselves on getting as much feedback as possible and tweaking our business for our customers.”
Five months and 20,000 Instagram followers later, the real showstoppers here are their lineup of beautifully dressed donuts. They are made in an offsite 2,000 square foot commercial kitchen, with a staff of 20. Multiple batches are produced throughout the day and delivered to their current pop-up location. For now, they have six year-round donuts and rotate in two-three seasonal creations every weekend.

These creations may have Miami lined up for blocks three days a week (and usually sold out before close), but the experience that The Salty Donut has created is what has them recognized as one of the best in the nation. When I arrived to their pop-up, I waited in line for 25 minutes and met 3 people. We talked and laughed about what we would order, and placed bets on which donut would sell out first. I listened, danced, and sang along to their 1980’s classic playlist. I saw children anxiously wait for their parents to hand them a donut, and then immediately stuff their face till they wore more than they consumed. Picnic tables are filled with people sharing, laughing, and smiling with pure enjoyment. The Salty Donut has redefined the donut for Miami, and has us pledging a merry allegiance to their creations.
We can only expect this experience to continually thrive as they move into their much anticipated brick and mortar location within the next couple of months. “It’s going to be a lot of what people love about us, but in a bigger space and on a larger scale,” says Amanda. As for future endeavors, both owners agree, “We plan to take it one step at a time. We don’t want to make massive amounts of donuts. Our focus will remain on small batches.” As for their notorious pop-up trailer, they will continue to use that as they expand their catering and private events business.
